This is the staple I grew up on. It is definitely the most popular side in Kenya and some other East African countries. It expertly absorbs the flavor of the food it is served with, is healthy, and is quite filling. No stew or curry in Kenya would ever be served without this hearty and delicious side! It doesn't have much taste on it's own, so always serve with more saucy or soupy meals.
