Akwadu is an African Banana Coconut Bake that is traditionally eaten for breakfast in Equatorial Guinea. This is one of my favorite desserts. My kids go crazy for it over oatmeal or as a granola parfait for breakfast or even over ice cream for an incredible dessert! I get asked if there should be liquid still in the pan when it's done...the answer is yes, but you typically don't serve this with much of the juice.
